Dinner in a Pouch


Oh my. I saw something like this online and wanted to test it out. I didn't feel like searching for it - so I just "wung" it. Good choice, I must say. Perfect for a easy dinner.

Ingredients:
1 yellow squash
1 zuccinni
1 turkey sausage
1 potato
4 big mushrooms
1/2 onion
Minced garlic
Butter

Directions:
Pre-heat oven to 400. Chop everything thinly. Toss in foil. Add desired amount of garlic, 
a hefty amount of butter, S &P, and some Cavendars or Tony Chachere's for a little kick. 
Seal foil. Bake for about 30 minutes or put on the grill! 
Would be good with shrimp and peppers, too!

Baked Veggie Goodness

I made dinner for my stud muffin tonight since he has a big test tomorrow. 

Simple, full of veggies, and delish.


Ingredients:
1 yellow squash
1 zucchini
1 potato
1/2 onion
4-5 white mushrooms
Minced garlic
Salt and pepper
Olive oil or butter
Shredded cheese

Directions: Preheat oven to 400. Dice onion and mushrooms - sautee in garlic, olive oil and butter.

In the mean time, thinly slice squash, zucchini, and potato.

In an 8x8 pan, spray non-stick and add onion, mushrooms, and garlic in the bottom. Place remaining veggies vertically in the pan. Season with salt and pepper (add whatever spice you want, Rich likes it a little spicy so I added Toni's Chachere's. Cavendars would be great, too!) Bake covered with foil for 25 minutes. Uncover, add cheese (however much you desire) and bake for 15 more minutes.

Guac-a-mole

Guacamole fan? I sure am.
Here is my favorite recipe!

Ingredients:
3 avocados
Great Value's Garlic and Lime Salsa
1/2 of an onion
1 TBLS margarine
Lemon juice
Salt
Garlic Powder
Paprika


Directions:
Dice your onions and throw them in a saucepan of melted margarine - sautee until liking (I like mine extra caramelized so they were pretty brown.) While they are cooking, cut and mash 3 avocados in a bowl. Add two-three spoons of salsa, a dash of salt, a couple shakes of garlic powder and paprika, and a few big squirts of lemon juice. Place in fridge. Once your onions are done, place them in another bowl and into the freezer to cool off before adding them to the guac. After about 5-10 minutes, add onions to guacamole and enjoy! 

Don't forget to keep at least 2 of the avocados pits!! 
Place them in the bowl with the guacamole, this is help it last longer and not brown!

Roasted Lemon Garlic Shrimp

My absolute favorite meal is roasted lemon garlic shrimp. It is ammaaazing!
Now, I'm not one for measuring, so when it comes to ingredients I just wing-it. 
It has worked well so far..

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients:
About 1/3 cup olive oil
1 lemon, zested then cut into wedges
1 tbls lemon juice
Parsey Flakes, mostly for color
Salt and Peper
Fettuccine
1 1/2-2 tbls butter
Minced garlic, I use the kind in the jar
1 pound fresh shrimp, medium-sized, deveined with tails off  ($5 bag at Wal-Mart)
Instructions: 
          1. Preheat oven to 400 degrees F.  In an 8x8 glass baking pan combine olive oil, lemon zest, lemon juice and parsley leaves. Olive oil should literally cover the bottom of the pan, if it doesn't drizzle in a little more. Season with S and P. Bake in oven for about 10 minutes, checking every few minutes, if it looks like it is getting too brown remove and proceed to next step.  Meanwhile cook pasta, drain, and set aside.

          2. Remove pan from oven, add butter and move it around a little to melt, add shrimp, garlic of your preferred amount, and the lemons wedges, toss to coat with oil mixture. Bake for 8-10 more minutes or until shrimp start to curl and brown, check often.  If the shrimp is still pink, flip it to the boiler for a couple minutes. Serve over pasta, enjoy!
The left over butter /olive oil in the pan is perfect to roll corn on the cob in!

Shrimp in a Skillet

As for dinner tonight, I just wanted a little something that didn't take long. I was inspired from Pinterest, but made my own version. I shall call it Shrimp in a Skillet - original huh? Anyway it was pretty good and only took about 15 minutes.
Here is the recipe:
(Again, I don't measure, I wing it)
About a cup of frozen shrimp (no-tail)
1/2 TBSP of margarine
Minced garlic (depends how garlicy you like it)
Lemon juice
About 2-3 cups of your choice of pasta
Olive oil
Garlic powder

In a skillet, melt margarine on medium. Add several squirts of lemon juice and minced garlic then stir. Add shrimp and leave for about 5-7 minutes stirring often. In the mean time, cook your pasta. Flip the shrimp so both sides get a little brown. Once the pasta is done, drain and add a little bit of olive oil, more lemon juice, and garlic powder. Stir. Add shrimp. Serving for one.

Deeli-o-cious

I LOVE smoothies. Lately it has been my favorite breakfast, it's one I actually make time in the morning for. I bought the Hamilton Beach smoothie blender from Wal-Mart for 15 bucks which has been totally worth it. I usually wing what I put it in - no measuring. I know there are a ton of smoothie recipes, but here is my recipe for a deeli-o-cioius strawberry banana smoothie:


1 cup of strawberry banana yogurt
Half of a banana (mine was pretty brown, but still just as good)
3 second pour of Silk vanilla milk
A small handful of frozen strawberries (or fresh if you want)
And a couple ice cubes
Blend and enjoy! :)
